Salted Caramel and Chocolate Mud Cake

chocolate-salted-caramel-cakeChocolate and salted caramel go great together in this delicious three layer cake.  This cake was made just for my salted caramel loving sister Wendy for her birthday.  It is a dark chocolate mud cake with caramel cheesecake filling, frosted with a salted caramel Swiss meringue buttercream, topped with a thick homemade salted caramel sauce, and garnished with bits of caramel candies. Mud Pie

mud-pieThis delicious mud pie is a new and improved recipe based on my Kona Pie recipe HERE.  I used a different ice cream called Mocha almond fudge.  I also covered the pie in fudge instead of covered with whipped cream.  I put a swirl of whipped cream on each piece instead.  The result is a chocolatey mocha yumminess! Creepy Halloween Cake

cakewithstrawThis cake is a four layer 5 inch cake with marbled Halloween colors inside of neon orange, purple, and green! The cake is filled with neon green whipped cream and covered in a neon green white chocolate ganache.  It is decorated with black ganache dripping down the top, along with creepy strawberry monsters with black chocolate and fondant teeth, and black gum paste tentacles! Everything on this cake is yummy and edible! Continue reading

Strawberry Swiss Meringue Buttercream Cake

strawberry buttercreamNow this strawberry cake is great. But the frosting, well that is another story entirely.  In fact,  it really deserves its own post! It is one of the best frostings I have ever had! It has pieces of fresh strawberries and the flavor is smooth, creamy, and not as sweet as regular American buttercream.  It is a little bit harder to make, but worth it! Continue reading

Chocolate Dobash Cake

dobash cakeThis Chocolate Dobash cake was a request from my Hawaiian husband for his birthday.  A Dobash cake is a popular cake in Hawaii.  It is a genoise cake (a sponge like cake) and a pudding like chocolate filling and frosting.  You can see other Hawaiian cakes here, here, and here.  The best part of this cake is the pudding like filling! Passion Fruit Strawberry Cake

milk bar passion fruit lilikoi strawberry cake

I based this cake on a strawberry cake from Milk bar.  Instead of using lemon, I used passion fruit.  I love how it is a naked cake and you can see all the delicious layers! The passion fruit and strawberry go together perfectly.  Passion fruit by itself is kind of tangy, but with the liquid cheesecake and vanilla cake, it all comes together deliciously!  I made this cake for my Aunt Teresa’s Birthday! Peach Mousse Entremet with Mirror Glaze

peachAn entremets is in modern French cuisine a small dish served between courses or simply a dessert. Originally it was an elaborate form of entertainment dish common among the nobility and upper middle class in Europe during the later part of the Middle Ages and the early modern period. An entremet marked the end of a serving of courses and could be anything from a simple frumenty (a type of wheat porridge) that was brightly colored and flavored with exotic and expensive spices to elaborate models of castles complete with wine fountains, musicians, and food modeled into allegorical scenes.

For modern pastry chefs, an entremet is a multi-layered mousse-based cake with various complementary flavors and varying textural contrasts. Continue reading

Blackberry Mousse Cake with Mirror Glaze

1This Blackberry mousse cake has everything it needs to be a great dessert. The base is a chocolate Italian sponge cake. It’s dark and moist, sweet, and has the distinctive flavor of chocolate. The delicate white chocolate mousse is light, and soft in both sweetness and flavor. However, the mousse suspends a blackberry purée that’s been set with a touch of gelatin. This fruit layer is intense in both its color and its tart flavor. The final touch is a glaze of melted white chocolate colored purple on top of the cake; it provides a startling white chocolate flavor, and vibrant blackberry purple color that stands out in contrast to the white chocolate mousse. Super Mario 3D World Party

dessert table no fansMy son Dylan turned 6 and wanted another Super Mario Party. This year his favorite Super Mario game is Super Mario 3D World, so I made a few decorations and games based on Super Mario 3D World.  It was fun, and challenging since I have not seen any 3D World party decorations online!

Chocolate cheesecake cookie dough cake

fudgeThis cake has 15 layers of deliciousness! It has 3 layers of chocolate cake, chocolate fudge, cookie crumble, liquid cheesecake, and cookie frosting.  I based my cake off of the chocolate malt cake from Milk Bar, I love those cakes and needed to try my own!  The beauty of this cake is that it is naked, so you can see all of the awesome layers! You can see some of my other naked cakes here. Continue reading

Layered Tres Leche Cake with Strawberries

cakeThis was my second time making a tres leche cake.  I made it for my family for New Years, and it was really yummy! The previous cake I made was with peaches, you can check that out Here.  It is a super moist, light, airy and super delicious sponge cake soaked in the three kinds of milk {evaporated milk, condensed milk, and heavy cream}. Tres Leches is a very light cake {especially if made without butter}, with many air bubbles in its crumb. This distinct texture is why it does not have a soggy consistency, despite being soaked in a mixture of three types of milk. Continue reading

Pink Rose Swirl Cake

rose swirl cakeI am so excited about this cake because I used a new recipe for the frosting! I usually made a basic buttercream frosting, but this time I tried the Swiss meringue buttercream.  It worked like a dream! The flowers held up, and there weren’t any air bubbles.  Also I have to say that it is much tastier, it is a little less sweet. This frosting is perfect for my husband  who doesn’t really enjoy super sweet frosting.

Apple Pie Layer Cake with Apple Roses

apple layer cakeApples are my favorite part of the fall season.  I love apple pies, and this time I wanted to try to incorporate an apple pie into a layer cake.  I have seen cakes on pinterest where they actually take a whole apple pie and bake it inside a cake! I thought that was fascinating! I decided not to try it this time, but I made my own version of apple pie cake :) I took an apple cake with chunks of apple inside, and layered it with apple pie filling, Dutch apple pie crumbs, and cream cheese frosting! This was also my first attempt at making a naked cake! Continue reading

Kona Pie

kona pie On my last trip to Hawaii, my family and I went to Kona and ate at Big Island Grill.  The food was delicious, but what I loved the most was the “Kona Pie”.  Kona Pie is rich creamy mocha almond fudge ice cream piled high on an Oreo cookie crust, topped with fresh homemade whipped cream, hot fudge, and macadamia nuts! Yum! We went back several times to this restaurant just for the Kona Pie! Since I have been home, my husband and I have had cravings for Kona Pie many times.  I knew this would have to be my next dessert for my blog.  Since there is no recipe from the Big Island Grill, I made my own.   It is super easy with only 3 ingredients!  I hope you like it as much as I do! Tiramisu

tiramisuTiramisu is a popular coffee-flavored Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa.  I first had this delicious dessert at my friend Mike’s Italian restaurant.  I always want to order it every time I go, but sometimes they run out of the Tiramisu.  I decided I needed to learn how to make it myself!
