Chocolate Candy Cake

1My son is still keeping track of his half birthdays, and wanted to celebrate turning 7 1/2  :) He requested a candy cake with all his favorite chocolate candy.  It was really fun decorating with candy, and I loved seeing his face when he noticed his new favorite cookies and cream Hershey’s bar! This is a 6 inch cake with four layers of chocolate mud cake.  It is so yummy and dense, almost like a fudgy brownie.  The trick is that I put melted chocolate right in the cake batter! There are three kinds of fillings in this cake- raspberry, blackberry, and ganache.  It is frosted with vanilla bean Swiss meringue buttercream and has a chocolate glaze drip.

Passion Fruit Lemon Layer Cake

lemoncake5I have a passion fruit vine that has been growing like crazy lately! The flowers are a beautiful purple, and I love seeing them pop up! The vine is very long and the tendrils grab on to every plant they can find in my garden.  Because of this, it is sometimes hard to see the flower.  The flower lasts only one day, and usually pops up in the late morning.  My son and I like to go outside at least once a day to hunt for passion fruit flowers, new passion fruit growing, or even large passion fruits that may have been hiding! I had more then the usual amount of passion fruit this week, so I decided to use some in this cake.  It is so rewarding using home grown fruit in my baking! This cake has three layers.  One is passion fruit and the other two are lemon.  The vanilla bean Swiss meringue buttercream balances out the tanginess of the lemon curd filling.  It is a winning combination!

White chocolate mud cake

cake1aMy sister Wendy loves purple.  When I made her this birthday cake, the first thing I envisioned was a giant bright purple sail on top of a purple cake.  However, the purple luster dust that I ordered online was more of a dark purple.  And the sail fell off the cake and broke in the car on the way to delivering the cake to her.  Next time I will secure the sail better! This cake is  5 layers; 3 layers of chocolate mud cake, 2 layers of white chocolate mud cake, with blackberry ganache filling, and frosted with vanilla Swiss meringue buttercream.

Colored Ganache Cake

blue cakeMy son is the only kid I know who celebrates his half birthday.  It started years ago when he asked me when his half birthday was.  He just couldn’t wait to be able to say he was 4 1/2.  So this year he wanted a half birthday party lol.  Since he is our only child and I only get to make one cake for him a year I agreed to make him a small party and a cake! His favorite color is blue so I made the cake with as much blue as I could! I based my cake on some of my idol Katherine Sabbath’s cakes.  I love how she makes colorful drips and tall chocolate bark pieces!

Pink Rose Swirl Cake

rose swirl cakeI am so excited about this cake because I used a new recipe for the frosting! I usually made a basic buttercream frosting, but this time I tried the Swiss meringue buttercream.  It worked like a dream! The flowers held up, and there weren’t any air bubbles.  Also I have to say that it is much tastier, it is a little less sweet. This frosting is perfect for my husband  who doesn’t really enjoy super sweet frosting.

Red Velvet Raspberry Swirl Cheesecake Cake

Every year for Valentines Day my husband makes me a special dinner and uses a recipe that he has never tried before.  I absolutely love it and look forward to it every year!  We have also somehow created a new tradition with my three year old son.  He was asking me what a cupid was and I explained to him that a cupid was like a special kind of baby/angel that flew around on Valentines Day and shot people with arrows to make them fall in love and delivered boxes of Chocolate to good boys and girls on Valentines day.  So he got very excited thinking that if he was a good boy the Cupid would hide a box of chocolate for him on Valentines Day.  Lol  now he is always telling me I need to be good so the Cupid will come.  It is kind of like a cross between Santa Claus and the Easter Bunny, but he brings it up several times a day and even asks me to tell him the story of the Cupid when he goes to sleep at night.  I don’t know how this happened! Anyway it is a new Valentines tradition we have lol! What are some of your Valentines Day traditions?
