I just LOVE the smell of pumpkin cake baking in the oven!! I just wanted to sit there in the kitchen and enjoy the smell the whole time this cake was baking. I got to make two cakes for this recipe, so it was twice as long I got to appreciate that delicious smell.   And actually, my house still smells like pumpkin cake even though it has been out of the oven for hours.  I even invited my neighbor Nori inside and said "You've gotta come in and smell this pumpkin cake!!" 

The only thing that beats the heavenly smell of this cake, is the taste! A perfect blend of pumpkin and spice, perfect for the first of October and welcoming in the Fall!

Now this cake is very special because it is shaped to look like a pumpkin and also has that delicious pumpkin spice flavor!

I think a bundt cake pan is perfect to make this pumpkin shaped cake, it already has the ridges and looks very pumpkin like, don't you think? I'm not sure which way I like the cake better, with the orange glaze or without? I will let you decide.  
For this cake, I simply baked two 6 cup bundt cakes, and stuck them together with buttercream frosting.  I got some green fruit roll ups and cut them out to make leaves and rolled them up to make a stem.  I think they look perfect for leaves.  I was going to try fondant if the roll ups didn't work.  I used an exacto knife to cut out the leaves.  And that's how easy it was!  By the way, the cake was delicious!! Note: Next time I will make the orange glaze a little darker orange!

Pumpkin Spice Bundt Cake

Prep Time: 5 minutes

Cook Time: 35 minutes

Ingredients (2 6 cup bundt cakes)

    For Cake
    • 2 boxes pumpkin spice cake mix
    • 2 cans pumpkin
    For Glaze
    • 4 tbs butter
    • 2 cups powdered sugar
    • 4 tbs milk
    for decoration
    • 4 green fruit roll ups

    Instructions

    For Cake

    Grease 2 6 cup bundt pans

    Mix 2 cake mixes with 2 cans of pumpkin

    Bake as directed on box

    Take out and let cool completely

    level cakes if neccessary

    spread thin layer of creamcheese frosting on top of first bundt cake

    Stack second bundt cake on top of first flat top to flat top

    For glaze

    melt butter in saucepan

    mix butter, milk, and sugar in bown till smooth

    pour on top of cake
